30 Day Blogging Challenge: Day 30 – Rustic Garlic & Herb Mashed Potato Recipe

I HAVE SUCCESSFULLY COMPLETED THE 30 DAY BLOGGING CHALLENGE!

Ok, not quite. The thing is, I thought the challenge was going to be a breeze. It was fun, but it’s called a challenge for a reason. I constantly found myself not posting due to my hectic work schedule and being a full-time student. Even though it isn’t an excuse, I enjoyed every moment of the challenge and found myself pushing myself and I can honestly say that if you’re considering doing the challenge, please do. Not only does it grow your audience, but I have been approached by so many companies on Instagram (My username is Just_Deeanne) which is always great if you’re looking to work with brands for your blog.

That was just a side note, please excuse me.

Mashed potato is a dish that I feel a lot of people can get wrong and then people often find themselves buying the store bought version. I have a problem with both: for one, I hate the powdered version, it lacks flavour and fluffiness and the microwave version just tastes like, boxed meals. Here’s my simple mashed potato recipe that will have you and your guests gobbling in no time!

INGREDIENTS:

SERVES 4 PEOPLE

6 Medium Potatoes//8 Small Potatoes (size is very important)

1 Tablespoon of Butter

2 Cloves of garlic (depending on your preference, if you don’t like garlic, my grandma uses BBQ spice)

1/2 Cup of milk, depending on how creamy you want your mash to be, I like to use just over half a cup

THE STAR OF THE DISH: Robertson’s Rustic Garlic & Herb Spice (No this post is not sponsored, I am just in love with this particular blend of spices). Love the brand and the range they have so if you can get your hands on them, please do!

Salt and Pepper to taste.

DIRECTIONS:

Peel and cut the potatoes into quarters/cubes making sure every piece is evenly sized so that you don’t have odd pieces that didn’t cook all the way through. On the stove, add the potatoes into boiling water on a medium heat for 20 minutes until the potatoes are soft. Once cooked, drain the water and mash the potatoes. Add butter, grated garlic cloves, salt and pepper, garlic spice and milk. Mix together and serve warm. If you feel like you’ve added too much milk, simply put the mash back on the heat and allow the milk to evaporate while stirring constantly, making sure you do not burn your mash.

And you can serve this with a variety of dishes like chicken, meat or fish.

30 Day Blogging Challenge: Day 29 – Baked Banana Bread Recipe

Hi Everyone!

I’d just like to apologize as this recipe was scheduled to go up yesterday but it didn’t so I really am sorry for making you wait. Also, I’ve received a few questions with regards to my YouTube channel. I haven’t posted a video in about a month because my schedule has been beyond crazy and I haven’t had the time to sit down and film a video due to the fact that I am practicing my driving in the hopes of getting my drivers license, I have to work 1 more weekend before I am officially done with my 3 month promotional campaign and I am in my second term of first semester which is an exam term and requires a lot of focus.

Without any delay, here is my banana bread. I posted a few videos on my Snapchat: just_deeanne and a lot of people snapped me asking for the recipe so here it is:

INGREDIENTS:

WET INGREDIENTS:

3 Mashed Bananas

1/2 Cup Melted Butter

1 Teaspoon Vanilla Essence

1 Cup Milk

2 Eggs

DRY INGREDIENTS:

2 Cups Sugar

3 Cups Flour

2 Teaspoons Baking Powder

1 Teaspoon Baking Soda

Nuts are optional.

DIRECTIONS:

Preheat oven to 180 degrees Celcius (356 F) (Mix all wet ingredients together: mashed banana, eggs, milk, vanilla essence and melted butter. When adding the melted butter make sure the butter is not warm as this will scramble your eggs, causing your bread to flop. Once all the wet ingredients are thoroughly mixed, add dry ingredients: sugar, flour, baking powder, baking soda and 1 cup of nuts if you wish. Mix once again, your consistency should not be runny nor too sticky. Somewhere in the middle and you’ve got it spot on. Insert the mixture into a baking tray, I personally love using bread tins and bake for 45 mins to an hour making sure that you insert a skewer and if it comes out clean, your cake is ready and you can switch off the oven and close the oven door so it will dry out for the remainder of the time. Once ready, take it out to cool making sure it’s still a little bit warm, top with butter and serve.

30 Day Blogging Challenge: Day 28 – Hassle Free Spaghetti Recipe

Hi Everyone! In keeping with my Bon Appetit section on my blog, I thought I’d share my favourite spaghetti recipe. Spaghetti is one of the easiest and hassle free meals to make and I love any Italian food. For the next 7 days I will be uploading a recipe a day as I have been very quiet on the blog.

INGREDIENTS:

500 g Ground/Minced Meat (I usually use 1 packet but for 4 guests or more I use 2 packets)

1-2 Onions (for more flavour I prefer using red onions)

1/2  green pepper, diced.

1 clove of chopped or grated garlic

1/2 a packet of spaghetti, depending on how many guests you are serving. My personal favourite is the Fattis and Monis spaghetti.

2 – 4 cans of tomato paste, my personal favourites are the Koo tomato paste or the Rhodes tomato paste cups. Depending on how many people I serve, 2 – 3 people I usually use 2 Rhodes tomato paste cups.

1 teaspoon of extra virgin olive oil

1 pinch of salt.

PREPARING THE MINCE:

Fry the onion until golden brown, add green pepper and add garlic.

Once the garlic and green pepper are sauteed, add the mince into the frying pan and fry until the mince is ready. I personally love to add BBQ spice for extra kick and hearty flavour. Once ready, it can be removed from the heat.

In a separate pot, add boiling water to spaghetti with a pinch of salt and teaspoon of oil. Once all ingredients are in the pot, boil the spaghetti for about 1–15 minutes or until it is soft, yet firm to chew.

Drain spaghetti into a colander and add it to the mince and mix together. Add tomato paste into the spaghetti and mince and season with a little bit of sugar just for a hint of sweetness and so that the bitterness of the tomato sauce is not too overpowering.

Feel free to leave out the mince if you’re not into mince but personally it’s what brings the whole meal together in my opinion.

30 Day Blogging Challenge Day 27 – OOTD Date Night & Goodbye Mini Cooper!

Hi everyone! I trust that you all had a great Easter weekend. I’m still recovering from my chocolate overload and as a result I’m in bed today working on the blog. Today I thought I’d show you a quick OOTD I wore on Monday when my boyfriend and I went out for burgers. I wanted something casual but still wanted to be girly. I recently started driving so I had to swap out my gold sandals for white Converse!

30 Day Blogging Challenge: Day 26 – What’s In My Backpack?

Hi everyone!

So I just recently uploaded my What’s In My Backpack video. I’m going to give the rundown here on my blog for those who can’t access YouTube but if you can please feel free to watch, subscribe and give it a thumbs up ❤️.

Basics:

– Cellphone: Basically, I’m obsessed with all my social media. I love keeping in touch with all my subscribers on YouTube and replying to comments on my blog so this is a definite must for me. A lot of people ask me where is my phone case from and it is from Typo but I wouldn’t recommend it because the glitter at the back comes off and looks really gross. I do have a new cover on my phone with an Eiffel Tower on it so I am so happy.

– Earphones: Definitely a must for me because my boyfriend listens to a lot of crude music which is a bit much for me so I prefer to have my own music and I wrote a lot of papers and I do not like silence so I have to have these babies with me at all times.

– Wallet: Even though I am your average broke student I like to have my wallet on me just in case I need money for food or textbooks even though I never keep money in my wallet because I’m super paranoid about being robbed or having my money stolen.

– My Student Card + Keys: I always have this on me because I can’t go anywhere without it. I have already started my driving lessons so hopefully one day my car keys will be attached to that bunch.

– File: To store my notes in before I paste them into my book.

– Binder: To store my notes in when I don’t have time to file them because when we print we have to get out of the line to accommodate the next person.

– Hardcover: I rarely carry this unless I have time to sort out my notes and study in the library.

– Prayer Book: Great book to have for when I feel anxious or need reassurance.

– Pencil Case: stores all my writing supplies as well as my stapler, stapler remover and extra staples.

– Emergency Bag: For when aunt flow comes to visit and when I need to freshen up because nobody wants to be smelly.

30 Day Blogging Challenge – Day 24: Inexpensive & Easy DIY Face Masks

Hi Everyone!

I really wanted to feature a DIY and Beauty segment on the blog and I decided that I would list a few of my favourite face mask recipes. Not only are these so inexpensive to make but most of the ingredients are natural which is great because we don’t use any chemicals on our face. Let’s get started!

LEMON AND HONEY FACE MASK:

Ingredients:

1/2 lemon

2 tablespoons of honey

Directions:

In a bowl, squeeze out the half a lemon and then add 2-3 tablespoons of honey until an even consistency is formed. Apply directly to the face avoiding the eye area and leave on for 15-20 minutes before rinsing off.

OILY SKIN SOLUTION:

Ingredients:

1 avocado

1/2 teaspoon of lemon juice

1 egg white

Directions:

Combine all ingredients to form a paste, apply to skin, obviously avoiding the eye area and wait for it to dry then rinse off with cold water.

HONEY OATMEAL BLAST:

Ingredients:

2 Tablespoons of honey

2 Tablespoons oatmeal

1 Tablespoon of plain yogurt

Directions:

Mix all ingredients together and apply to a clean, dry face avoiding the eye area. Leave on for 5-15 minutes and rinse off.

30 Day Blogging Challenge – Day 23: Empire before Marriage.

“The dream is free, but the hustle is sold separately”

 

I apologize for that horribly titled text but that isn’t what my post is really about.

So here’s the scenario:

My boyfriend’s brother proposed tonight and we were all startled to hear the news for 2 reasons: Firstly it was unexpected (but come on, it’s always a surprise isn’t it?) and secondly they’ve only been dating for about a year or even less. Please don’t get me wrong, I am extremely happy for him. What took me by surprise was when my boyfriend of 3 years asked me if I’m excited to get engaged to him (Now keep in mind I’m turning 20 and he is turning 21). My answer? Was a good old fashioned NO.

What? Did I just read right? Did she just say that she doesn’t want to marry the guy she’s been dating for 3 years?

Obviously I want to marry my boyfriend but that’s not my main priority. What is it then, you may ask?

Myself.

Yes, I would like to build my own empire before I even think of getting that serious with someone else. I love being in love, I love seeing people in love but I want to know that I am happy with myself before I can put someone else before me. You see when you finally say the words “I Do” you make a promise to share a bond, a home, a life with that person. You promise that you will carry his children, cook and clean and plan a life with him (or her, just by the way) and he promises to provide for you and support you. That’s okay, I have nothing against getting married young. What I do have a problem with is people rushing into things for the wrong reasons: Moving out because I can’t stand my parents anymore or I want the ring because it’s a more solid commitment than boyfriend or girlfriend.

I still have a lot of things to do before I want to walk down the aisle or say yes to the magic question. I want my degree, I want to travel, I want to make silly decisions which lead to the best adventures, I want to meet new people and learn things about their past so that they can be lessons for my future. I want to push myself to do things that I wouldn’t even have thought of, dream big and watch things unfold, lose myself and then find myself again. There’s nothing wrong with getting married young, but if you are going to say I do, ask yourself: Have I accomplished everything that I’ve wanted to before I start supporting the dreams of someone else for the rest of my life?

Food for thought & a big congratulations to my boyfriend’s brother. Nothing makes me happier than to see that two people who are in love and have already achieved all of their dreams and plans that they have set out come together and finally become one. All of the best, can’t wait for the wedding.

30 Day Blogging Challenge: Day 22 – 5 Fave Tracks of the Week

I’m going to be totally honest, I didn’t really know what to write and I had a whole lot of preparation for campus so it’s currently 22:36 here in South Africa and I don’t know why I am exhausted as I am right now.

I’ve mentioned before that I love listening to music and I thought I’d just leave a few tracks that I’ve been loving lately. I have done a post like this before but as time goes on, my music gets updated and I listen to new things.

  1. All Your Fault – Big Sean ft. Kanye West (Explicit): I have an unhealthy obsession with memorizing fast-paced lyrics and I have come to love this song so much. It took me about two weeks to fully nail it but I just love rap music because sometimes there are some great puns and a lot of word play. As an English major you can imagine how that excites me!
  2. We Don’t Talk Anymore – Charlie Puth ft. Selena Gomez: Back to my love for girly, romantic music which Matthew can’t stand when I blast it in the car, this song really has a great feel specially when you’ve lost connection with a loved one. It’s really one of my top tracks on my playlist and I am loving it.
  3. On My Mind – Ellie Goulding: Who doesn’t love blasting Ellie Goulding and not caring who hears? I know I do, especially this latest hit track because it is literally music to my ears. Well done Ellie! Dance floor chart topper for sure.
  4. In the Night – The Weeknd: This man did not win those Grammy’s for nothing ladies and gents. The Weeknd is an extremely talented artist with a Michael Jackson feel. I like that he can make music that speaks to the soul but still has that sultry edge that makes your knees weak.
  5. King Kunta – Kendrick Lamar: If his Grammy performance did not blow you away then please feel free to leave my page. I honestly love rap music and among my favourite artists, Kendrick Lamar definitely tops my list. I am so excited to see what he’s going to do next
